Sweet Potato Casserole with an Indian Cuisine Flair

Happy New Year from all of us here at Sambar Kitchen!  With 2020 (finally) behind us, we know many people are looking forward to starting new in 2021.  We’ve noticed new year’s resolutions revolving around clean and healthy eating, trying new foods, and even the desire to cook more at home.  

A 2019 survey showed that more than 56% of those who eat out will do so at least 2-3 times per week — including in-restaurant dining and ordering food to go. And with today’s unfortunate landscape of the restaurant industry, we’ve seen more and more people making the move to get crafty in the kitchen instead of going out to eat. We’re here to tell you that you don’t have to be a master chef to cook up delicious and authentic Indian cuisine!

We get it, it can be tempting to hop on UberEats and place an order by hardly lifting a finger; especially if you’re cramped for time, or maybe you just got home from work and want to relax.  But, our ready-to-eat sauces make mid-week dinners a breeze – just heat, serve, and enjoy!

For this recipe, we incorporate our Pineapple Coconut cooking sauce into a unique sweet potato side dish.  Our sauce comes packed with sweet potatoes, pineapples, and other Indian spices which all pair nicely. What’s great is that it doesn’t take much time to make, and you only need four ingredients (seriously)!

Indian Cuisine-Inspired Sweet Potato Casserole

  1. Preheat the oven to 425 degrees.
  2. Peel the sweet potatoes and cut into 2-inch chunks.
  3. Combine the olive oil and sweet potato chunks, mixing to evenly coat them.
  4. Add the salt and mix together
  5. Add the sweet potatoes to a roasting pan, or typical baking sheet. 
  6. Roast them for 15 minutes or until done. 
    1. You’ll know they’re done when they form a bit of a crust, and become soft (poke them with fork).
  7. When the sweet potatoes are close to done, heat up the Pineapple and Coconut sauce in a pan. 
  8. Pour the heated sauce over the potatoes when you are ready to serve!
