Have you ever tried grilling a pizza? Cooking your pizza on the grill is quick and easy and adds a wonderful summer smokey flavor to your favorite pizza toppings. Not to mention that amazing crispy crust!

How to Grill Pizza

The trick to grilling pizza is to cook the dough first on the grill. You can use a ready-made crust or prepare your own dough if you want extra chef points. Grill the crust on one side first. Then flip it, brush the grilled side with sauce and toppings, and return the pizza to the grill for final cooking.

Make sure any meat toppings are pre-cooked because you’ll only be leaving the pizza on the grill for 2-4 minutes once the sauce and toppings are on. You may want to pre-grill your veggies too if you like them on the softer side.

Summer Lunch Sensation Mango Coconut Rice

Imagine finding a spot by the lake with a cool summer breeze and enjoying this Indian-inspired rice summer recipe. The fresh taste of juicy mango with a hint of sweet coconut gives your taste buds a thrill. And it’s easy too!

In a large saucepan, heat the oil over medium-high heat. Add the rice and stir to coat with the oil. Bring to a boil. Cover, reduce heat to low, and simmer about 15-20 minutes or until the liquid is absorbed. Stir in Sambar Kitchen’s Mango Coconut cooking sauce.

For an extra treat dice some additional fresh mango and add to your rice dish. Serve and enjoy!

Sweet and Spicy Cucumber Salad

What lunch isn’t freshened up with a nice cucumber salad. This delicious recipe tantalizes your taste buds with the bright tangy flavor of tamarind!

Ingredients:

  • ½ bunch cilantro
  • 2 Tbsp. Sambar Kitchen Tamarind Puree
  • 1 garlic clove, finely grated
  • 1 small shallot, finely chopped
  • 2 Thai chiles, finely chopped
  • 2 Tbsp. fresh lime juice
  • 2 medium cucumbers thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup coconut flakes
  • Crispy fried shallots or toasted sesame seeds as a topping
  • Kosher salt (to taste)

Preparation:

  1. Thinly slice cilantro stems (about 2 Tbsp.) and place in a large bowl. Coarsely chop remaining cilantro; set aside for serving.
  2. Add garlic, shallots, chiles, tamarind puree, lime juice, and coconut flakes, to a bowl with cilantro stems and mix well. Add cucumbers and tomatoes, season with salt, and toss until everything is nicely coated.
  3. Transfer salad to a plate or bowl and top with chopped cilantro, fried shallots, and/or toasted sesame seeds.
