Tandoori Chicken Summertime Recipe
The secret to juicy Indian Tandoori Chicken is to marinate it overnight with spices and herbs. You need Greek yogurt, vegetable oil, Sambar Kitchen channa masala and lemon, coriander, cumin, turmeric, chili, and pepper powder.
Directions
- Mix the above ingredients thoroughly in a bowl. Ensure that the marinade is thick and it hugs your tastebuds.
- Dry your chicken and make some cuts on it. Add it to the marinade and mix. Make sure the meat is fully coated.
- Refrigerate for at least 6 hours.
- Then grill the chicken till ready using your oven, pan, or outdoor grill. You can also smoke it or use an air fryer.
- You can serve it with mango coconut rice.
Paneer Tikka
Paneer Tikka Masala is a famous traditional Indian dish that you can make at home to go with naan or rice. You will use Indian Cottage Cheese (paneer), spices, yogurt, tomato-based curry, and onions.
Directions
- Mix the yogurt, onions, and spices in a bowl
- Add your paneer and keep mixing until the marinade covers it nicely.
- Refrigerate for at least an hour.
- Lastly, fry or grill until the cheese turns golden brown.
Chettinad Fish Curry
The spicy and aromatic dish originates from the Chettinad region in India. You will need fish and Sambar’s tamarind, among other spices, to ace this recipe. Fry the onions, then add your spices, tomatoes, and tamarind. Finally, add the fish and let the mixture simmer for 10-15 minutes. Serve with rice or naan.
