Get Ready for Fall With These 4 Easy Meal Prep Recipes!

One-Pan Brown Rice Risotto

This One-Pan Brown Rice Risotto is the perfect dish to meal prep for Fall. It’s easy to make and can be tailored to your liking with whatever vegetables you have on hand. Plus, it reheats well, so you can enjoy it all week long! To make this dish even easier, we recommend using our pre-made Sambar Masala sauce.

In a large pot, heat oil over medium heat. Add onions and green pepper, occasionally stirring, until slightly softened, about 5 minutes. 

Next, add carrots and celery. Stirring occasionally, cook until vegetables are crisp-tender, about 10 minutes. Add brown rice and stir to coat with oil. Cook 1 minute or until lightly browned. 

Pour in vegetable broth and bring to a boil over high heat. Reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let stand 10 minutes covered before serving. Season with salt and pepper if desired before serving.

Vegetable Quinoa Stir-Fry

This dish is so easy to make and can be customized with whatever vegetables you have on hand. Quinoa is a great source of protein and will leave you feeling full until your next meal. 

To make this dish even easier, you can use our pre-made Sambar Stir Fry Sauce. Add your veggies and quinoa to the sauce, and you’re good to go! We recommend adding broccoli, carrots, green beans, corn kernels, cauliflower, and edamame. Mix it up with any other veggies you may want to try. 

Think about how many days you want your dish to last—if you’re only going to cook it for one day at a time, then cut back on the liquid or oil by 1/4 cup when cooking to keep it fresh over multiple days. Refreshing Cucumber Mint Salad

BBQ Chicken Zoodles (Zucchini Noodles)

The perfect Fall meal for when you’re short on time but still want something healthy and delicious. Just toss some chicken, zucchini noodles, and our BBQ sauce in a pan, and you’re good to go! This meal prep recipe is gluten-free, so it’s great for anyone with dietary restrictions. 

With the holiday season coming up, it’s important to keep your diet balanced and filling. Our BBQ Chicken Zoodles will do just that! Plus, as a bonus, you can make these ahead of time and freeze them for later use.

To make this meal, preheat the oven to 400 degrees Fahrenheit. Add olive oil to a large skillet over medium heat. When hot, add the chunks of raw chicken breast and cook until browned and cooked through about 8 minutes. Add the zucchini noodles and stir well. 

Next, pour in the water, then cover with a lid, turn off the stovetop heat, and let it cook for 5 minutes more. Stir in barbecue sauce if desired. Spread onto a cookie sheet lined with parchment paper and bake for 10-12 minutes at 400 degrees Fahrenheit or until zoodles are tender yet firm. Serve with a squeeze of fresh lime juice and enjoy!
