3 Simple, Vegan Indian Recipes with Sambar Kitchen

Madras Lentil Over Fresh Spaghetti Squash
While our traditional South Indian cooking sauce comes ready to heat and serve, this added twist offers up even more nutrients to the already healthy vegan dish!
Your Shopping List
- 1 large squash
- 2 tbsp olive oil
- 1 medium onion, thinly sliced
- 2 bell peppers of any color, thinly sliced
- 1 jar (16oz) Sambar Madras Lentil Cooking Sauce
1. Preheat your oven to 400 degrees.
2. Begin by cutting your squash in half and scoop out the seeds and center strands.
3. Place your squash halves cut side down on a foil and cooking spray coated pan. Cook for 30-45 minutes.
4. While your squash cooks, heat the oil in a large skillet.
5. Add in peppers and onion. Saute until slightly tender, about 3-4 minutes.
6. Add madras lentil sauce and reduce to a simmer.
7. Remove squash from the oven and, while hot, scrape the vegetable meat to create noodle-like strings.
8. Combine spaghetti-style squash with sauce mixture and serve.

For those who aren’t as familiar, channa masala is jam packed with fiber, protein, manganese, and iron! While our gourmet channa masala comes ready to heat and serve, we like to bulk it up just a bit at our dinner table.

- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cups of canned chickpeas, drained and rinsed
- 1 jar (16 oz.) of Sambar Channa Masala Cooking Sauce
- Fresh cilantro (optional)
1. First, heat your oil in a large skillet over medium heat.
2. Add onion and saute for 2-3 minutes, or until tender.
3. Add in the chickpeas and saute an additional 3-4 minutes.
4. Stir in the sauce and heat to a simmer.
We recommend serving this over cooked rice for an authentic taste! For added flavor, sprinkle some fresh cilantro on top!
Easy Pineapple Coconut Rice
This fruity blend of South Indian spices will surely become a favorite among your friends and family. Here’s an easy way to serve our rice mix.

- 2 tbsp oil
- 1 bell pepper, julienned
- 1 medium onion, sliced thinly
- 1 cup pineapple chunks (fresh or canned work well)
- 1 (12 oz) jar Sambar Pineapple Coconut Cooking Sauce
- 1 cup canned chickpeas, drained
- 2 cups rice of choice
1. Begin to cook rice per package instructions.
2. While rice is being prepared, heat oil in a large skillet over medium heat.
3. Add in your peppers and onions and saute 3-4 minutes or until vegetables are tender.
4. Next, mix in the pineapple and cooking sauce, bringing to a simmer.
5. Remove mixture from heat and combine with fluffed rice.
