Ghee & Garlic Pan Seared Steak

Your Shopping List

  • (2) 1.5 inch thick premium grade ribeyes with lots of marbling
  • 1 clove garlic, fresh or pre-minced work
  • Coarse Kosher Salt
  • Freshly Ground Black Pepper
  • Canola Oil
  • Olive Oil
  • Ghee
  • Freshly Chopped Parsley (optional)
  1. Remove steaks from the fridge and pat dry with a paper towel. Drizzle approximately 1-2 teaspoons of olive oil on your dry steak and season generously with salt and pepper, being sure to rub in the edges and sides well.
  2. Rest your steaks until they reach room temperature for approximately 45-60 minutes. This is to ensure we are not adding a cold steak to a searing hot skillet.
  3. Allow your cast iron skillet to get hot over a high heat for about one minute, then add canola oil and allow to get hot. *We won’t be using olive oil in our pan due to its lower smoking temperature.
  4. Carefully add in your steak and allow to cook undisturbed for one minute. Flip your steak and cook on the other side undisturbed for one minute. Flip again.
  5. Tilt your pan to bring oils and juices to the edge and spoon the basting oils over your steak. Be sure to coat the entire steak, focusing on any areas with higher fat contents for more flavor. Do this for a total of one minute.
  6. Repeat step 5 on the other side of your steak. Your steak should be cooking for 4 minutes after this, with two minutes on each side.
  7. Add ghee to the skillet
  8. Continue flipping every 30-60 seconds while basting with the hot ghee.
  9. Add garlic after 1 minute
  10. Continue these steps until the thickest portion of your steak reaches an internal temperature of at least 125 degrees F to achieve medium rare. If aiming for a medium steak, internal temperatures should be 130 degrees F.
  11. Transfer steak to a cutting board immediately when the desired temperature is reached and rest for at least 5 minutes before carving and serving.
  12. Top with basting ghee and garnish with fresh parsley.
